Sausage Saffron RisottoThis risotto is a must to try dish, it is sooo good!! The secret is to find a very good italian sausage. In the States usually the sausage called "Italian Style" has a lot of fennel inside, if you can, try to find one that doesn't. The fennel flavor is going to be very strong and you don't want that.
Cut the sausage in small pieces so they will look tiny and cute in the risotto.
It takes time to make a good risotto, to find the right amount of water to add and to not overcook the rice. Be patient with yourself and try and try again!
