Artichoke Lasagna
Artichoke LasagnaAs every Thanksgiving weekend, my husband and I, drove south from San Francisco to the Monterey Bay. The area between Santa Cruz and Monterey is very famous for the artichoke and brussels sprout farms.
Last year I bought 20 small and tender artichokes and I made a great artichoke sauce for my tagliatelle. They were sooo good that this year we stopped to the same farm and bought A LOT of small tender artichokes!
I made a couple of pans of Artichoke Lasagna, the first one to enjoy for dinner right after the oven, the second one divided in single portions is still in the freezer :-)
I know right now you are probably making the last grocery shopping for New Year's Eve Dinner, but if you didn't decide your menu yet and look for a new idea, I think the Artichoke Lasagna could be a good one!
