A delightful option for a light and wholesome meal, these ghee seared scallops are served with a frisée, red onion, and kumquat salad drizzled with a aromatic fruity mango dressing. Scallops are the filet mignon of the sea and you don't want to overcook them. Sear them in a cast iron skillet for 2 minutes, flip and cook one more minute.
