Dark Chocolate Chunk Oatmeal Cookies
As some of you may know, Matt and I are getting married in about 7 weeks (!!) and while most brides stress out about wedding planning, “shedding for the wedding,” and checklists from The Knot, the last few weeks I have been stressing out about what cookies to make as our wedding party favors.

These Dark Chocolate Oatmeal Cookies have made it to the shortlist. I’ve made these cookies multiple times, and for good measure, I recently made them again two weekends in a row to make sure the recipe is fool-proof. And just like that scene in Love Actually, to me they are perfect.
Why" Let me count the ways:
They only require one bowl to make. So easy-peasy, so incredibly simple to make. They require few ingredients, most of which you might already have in your pantry. The only fancy ingredient here is the dark chocolate I used.
I used Lindt A Touch of Sea Salt EXCELLENCE bars. (Yes, I work with Lindt for this blog, but this is NOT a sponsored post!) I just really, really, really love these bars. I love the smooth and silky chocolate, and the little pops of saltiness. If you want to use something else, feel free to do so, the recipe still works.
