Crispy pata is easy to love: pork trotters or knuckles deep-fried and served with a vinegar sauce and heaps of steaming white rice. A restaurant in Lucena dedicated to this dish serves the best I’ve ever had. At Bubbles Crispy Pata, they use fresh pork cooked in the cleanest oil and fried to perfection. The result is crackle-crisp skin laced with the most glorious back fat encasing lush meat that’s pinker towards the center. Dipped in a soy vinegar sauce, it’s easy to wolf down the entire meal with friends in an eyeball-rolling gustatory orgy.
Yes, it’s that good.
And I know that it’s pork on pork, but you must also try the pork sisig. If you like crunchy sisig, this is the one you’ve been waiting for your whole life. And for dessert, the leche flan. Bubbles is an excellent restaurant. I know it’s far, but it’s so worth the trip!
