Salad with white beans and tuna
We love legumes, and although we usually prepare them in the form of stew, sometimes, especially in summer, they want a lighter and fresher form, which is why we are addicted to eating them in salads. What do you think of our proposal for today"
Ingredients for 2 servings:- 3.5 oz of white beans- 2 cans of tuna in natural- 15 cherry tomatoes- 1/2 cucumber- 1/3 of green pepper- Black olives- Green olives- Chopped parsley- Salt- Olive oil
Recipe:- Soak the white beans the night before.- The next day, cook them in boiling water with a little salt until they are soft.- Wash the cucumber, tomatoes and green pepper.- Cut the pepper into small strips, the cucumber into squares and the cherry tomatoes into 4 wedges.- In a pan with olive oil, sauté the green pepper over medium heat until golden.- Place it on absorbent paper to remove the excess of oil and reserve.- Drain the tuna.- Mix in a bowl the white beans, green pepper, cucumber, cherry tomatoes, tuna and green and black olives.- Sprinkle a little chopped parsley and salt over the top.- Pour a drizzle of olive oil over it and stir again.
