ROAST BEEF INGREDIENTS:
3 lb Eye Round Roast
2 Cloves of Garlic, very thinly sliced
Fresh Rosemary
1/4 cup of Olive Oil
1/4 cup of Dry White Wine, I used Pinot Grigio
Plenty of salt and pepper

For the wine sauce:
2 Tbsp of Unsalted Butter
2 Shallots
1 cup of Dry Red Wine
1 cup of Beef Stock

For the horseradish sourcream:
1 cup of Sour Cream
2-3 Tbsp of Prepared Horseradish
2 Tbsp of Chopped Chives
Plenty of Salt to taste
