Hi, friends!  Happy first Monday of June!! Today we are going to celebrate summer and take advantage of one of my favorite bounties of the season ? corn.  Because, with the way the time flies by, we absolutely must eat all the fresh corn humanly possible while the season still allows.  I mean, before you know it we are all going to be singing Christmas carols and hanging holiday decorations.
But until then, let us feast on all the pretty, green-hued hummus that happens to be as good for our waistline as it is for our summer loving souls!
