Red Cabbage Salad with Pears and Pine Nuts

Thinly sliced red cabbage is tossed together with red onion, pears, pomegranate seeds and toasted pine nuts dressed with a simple mustard vinaigrette. It's crunchy, zesty, colourful and ridiculously easy and quick to make.
1/2 Small red cabbage, shredded
1 Red onion, thinly sliced
2 Pears, core removed, thinly sliced
2 tbsp Pomegranate seeds
50 g Pine nuts
2 tbsp Olive oil
2 tbsp White wine vinegar
2 tsp Dijon wholegrain mustard
Salt and cracked black pepper
Combine the cabbage, onion, pear and pomegranate seeds in a large bowl.
Place pine nuts in a small fry pan over medium heat and cook for 2 minutes, stirring regularly, or until golden brown. Remove from heat and set aside.
To make the dressing, whisk together the oil, vinegar, mustard, salt and pepper until well combined.
To serve, toss the pine nuts through the cabbage mixture and drizzle with the dressing.
