These Egg, Turkey & Stuffing Muffins are a quick and easy meal made with Thanksgiving leftovers and a muffin tin. With stuffing, slices of turkey, eggs and an easy blender sage hollandaise sauce, these muffins are perfect for breakfast, brunch, snacking and everything in between!

As for me, I?m? well, neither.  This year I have it easy.  Since Boy and I moved to North Carolina it will just be us and the in-laws.  And we have collectively decided to kind of forgo all the over-the-top-turkey-day-shenanigans this year. Boy and I will be traveling a whole 7 miles over to my in-laws, partaking in some appetizers, love and laughter; and then heading out to dinner.
Yup, this year I?m letting someone else do the cooking AND the dishes.  ?
BUT, don?t forget, I have already cooked a bunch of holiday dishes for you guys (see here, here, here and more coming up), so I?m a little over all the turkey day antics.
