To assemble the casserole, just mix all ingredients (except cracker crumbs and cheese) in a large bowl. This step can be done up to 24 hours in advance, making dinner time a breeze.

Ingredients Needed

4 Chicken Breasts– cooked and chopped. You can either bake them or poach them in advance or purchase cooked chicken breasts from the deli of your grocery store.2 Packages Frozen Chopped Spinach– thaw them and squeeze out the water so your casserole isn’t watery. I like to thaw the spinach by putting it in the refrigerator a day or two in advance.Mayonnaise– makes the casserole extra creamy. Sour cream can be used instead.2 Cans Condensed Cream of Chicken Soup– cream of mushroom soup can be used instead.Lemon Juice– some acidity perks up the flavors.PepperShredded Sharp Cheddar Cheese– Colby Jack, Pepper Jack, or Swiss can be used instead.Ritz Crackers– make a buttery, crunchy topping.
