Dish of the Week | Pig Ear Pad Thai from Myers + Chang
My heart starts beating faster. My mouth starts to water. My tummy starts to rumble. When I see pig ears on a menu, I must try it.
This is the Pig Ear Pad Thai from Myers + Chang and it’s absurd in its deliciousness. A classic thai dish is amped up with crispy slivers of fried pig ears (a main ingredient in one of my life’s greatest pleasures: Filipino sisig), along with thai basil, tamarind, and cracklins. That’s right, more pig. The noodles are just on the right side of chewy, coated with a sweet-spicy-sour sauce, brightened by a big squeeze of lime. There’s lots of texture – from the purple cabbage, from the cracklins, and most importantly, from the crunchy pig ears. I’ve been a big fan of Myers + Chang since I first had a bite of the fall-from-the-bone ribs and their coconut cream pie, and I like it even more now. I appreciate how they’ve been adding more Filipino-inspired items to their menu – I’ve seen lumpia, chicken adobo, and pork sinigang as specials. They have my heart, mouth, and tummy.
