Let’s talk about how the beef tartare from Townsman is so good, you might actually forget that you’re eating raw meat. The meat itself tastes clean, with the perfect tender consistency – not too firm nor too mushy. It’s creamy with hints of tang and sharpness from the gribiche, which is a French dressing typically made with eggs and mustard and vinegar. Then there’s an egg yolk, velvety and rich, the classic accompaniment to steak tartare.

And for those who know me well, you’ll understand that a big part of this dish’s appeal are the large, salty, crispy homemade potato chips. I never turn down a good chip, especially if it comes with an even better dip. Beef tartare isn’t exactly a dip, but it is when scooped up by these golden chips. The warm and crunchy chips add great texture to the dish. When I see crudo on the menu, I typically order a seafood one (and Townsman actually has a pretty amazing striped bass crudo), but I can’t resist this beef tartare. It’s craveable and shareable!
