Ingredients for 2 people:- 2 loins of salted cod about 2 cm thick- 1 clove of garlic- 1 cayenne- Olive oil- Salt- Chopped parsley
Recipe:- Peel and slice the garlic.- In a large saucepan, fry the garlic and cayenne in plenty of olive oil until golden.- Remove them from the oil, since we only want it to catch the taste of them.- Insert the cod loins with the skin up and let it cook over medium heat.- After about 5 minutes you will see that the fish is releasing its gelatin (it is like fine foam), move the pan from time to time to facilitate this process.- When you have released enough gelatine on that side, we turn the fish and put the skin down to repeat the process.- Remove the cod and reserve.- Turn off the heat and let the oil a little temper.- Remove the oil and gelatin for 3-4 minutes with the aid of a strainer to help emulsify more quickly until a textured yellow sauce is formed.- Serve the cod and pour the sauce over.
