How To Make Cheesy Buffalo Chicken Taquitos
Mix the filling ingredients together. The filling is a simple mixture of cream cheese, Buffalo wing sauce, Ranch dressing, shredded cooked chicken, shredded cheddar cheese, blue cheese crumbles, and sliced green onion. So much flavor here.Roll up the taquitos and place them seam side down on a baking sheet.Bake for 15 minutes or until golden and crispy.
Rotisserie Chicken
You will need about 2 cups of shredded, cooked chicken for this recipe. It’s easiest to use rotisserie chicken, but you can use leftover baked, poached, or grilled chicken instead.
Tortillas
You can use either flour or corn tortillas. I prefer flour. You want the small (fajita-size) tortillas. Whichever you are using, place the tortillas in a stack on a microwave-safe plate with a damp paper towel on top of the tortillas and microwave for 30 to 40 seconds. This will make them more pliable so they are less likely to tear when you roll them up.
Make Ahead and Storage
The filling can be mixed together up to 24 hours in advance. Refrigerate and then let sit at room temperature for 20 to 30 minutes before rolling the taquitos so th...
