For seasoning, the burgers are coated in blackening seasoning. It is a seasoning blend that typically has a bit of heat and a whole lot of flavor. Popular in New Orleans, it is a great seasoning for fish, pork, chicken or steak. It typically contains paprika, cayenne pepper, thyme, oregano, and garlic powder. You can make your own blackening seasoning mix or use a store-bought one like Paul Prudhomme’s Blackened Steak Magic.
