Bacon wrapped shrimp by themselves make a tasty treat, but coating them in red pepper jelly really ups the flavor.
If you’ve never tried red pepper jelly, you really must. It is one of my favorite condiments and you can find it at the store with the jellies and jams. I love to make a salad dressing with it and it goes wonderfully with deviled eggs.
Most pepper jellies are way more on the sweet side than the spicy side so I add just a touch of cayenne pepper to the pepper jelly and mix it with a little olive oil before glazing the shrimp.
It takes a little time to peel the shrimp and wrap them in bacon, but besides that, Bacon Wrapped Shrimp with Pepper Jelly Glaze are a quick and easy party food. They have a wonderful blend of salty, sweet, and spicy. And it also works well as a main dish if you serve it with a rice pilaf.

2 tablespoons olive oil or vegetable oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper
